FARM TO TABLE GASTRONOMY
Vejrø’s farm-to-table gastronomy is built on ingredients grown, raised, and produced directly on the island. Vegetables come from our regenerative fields and greenhouses, herbs are picked fresh each morning, and meat, eggs and preserved goods are created within our own closed-loop food ecosystem. The kitchen works seasonally and circularly, using what nature provides and minimising waste through fermentation, pickling, and in-house preservation techniques.
